The Banquet Server is responsible for the set up and service of the banquet functions in accordance with the details outlined in the banquet event order and per guest requests. Responsible for delivering and serving food and beverage to guests in a friendly, prompt and efficient manner.
ESSENTIAL JOB FUNCTIONS (Associates will spend the majority of each shift on these essential duties)
Set up banquet rooms and tables in accordance with the banquet event order specifications.
Make changes as requested by the guest.
Deliver and serve food and beverages.
Must be knowledgeable on different styles of service (i.e. reception, passed items function, buffet, family-style, seated, white-glove formal).
Provide professional banquet service following all guidelines (i.e. table settings, serving and clearing of courses and food items, beverage service).
Set up, monitor, refresh and breakdown coffee breaks, receptions and buffet tables for specified functions according to group requirements.
Ensure menu knowledge. Be aware of food allergies and accommodate requests for special dietary restrictions.
Communicate special requests and allergies to the kitchen. Complete pre-function side work.
Monitor and maintain cleanliness, sanitation and organization of assigned work areas. Responsible for the clean-up and removal of all tabletop items, linen and equipment from the function as designated by the function requirements.
Remove trash, clean tables and chairs as needed, vacuum and maintain condition of banquet areas. Maintain cleanliness and organization of all banquet storage areas and work stations. Assist in completing inventories (china, silver, linen, equipment, paper goods, and dry food items) as requested.
Comply with all departmental and Hotels policies/service procedures/standards. Adhere to all Food Safety and Sanitation guidelines.
Maintain knowledge of correct maintenance and use of equipment. Use equipment only as intended.
Complete TIPS training and strictly abide by the state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
Retrieve alcoholic beverage items from bar and serve to guests.
Provide wine and champagne service as outlines by the banquet event order.
Follow cash handling procedures when serving cash bard.
Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy and whatever time of day.
Maintain positive guest relations at all times. Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately.
