  • Lead Kitchen Team of 5 staff members in Head Chef’s absence
  • Execute meal preparation and assist staff in food production for 3 schools and approximately 500 students; delegate responsibilities to team members to ensure successful daily operations
  • Responsible for the ordering process for 3 schools from designated distributors
  • Proactive planning around staffing shortages, food shortages, and/or possess the skills to problem solve with short turn-around time to ensure on-time daily food production
  • Coordinate staffing schedules, prep schedules and cleaning schedules
  • Model, train, and hold all staff members accountable on TBS Staff Policies and Procedures
  • Maintain kitchen organization by following specific systems such as: First in-First out rotation system, verify all food products are properly dated, organize kitchen stock and ingredients, etc.
  • Maintain kitchen clean and always sanitized, per Department of Health standards
  • Maintain all internal documents that are essential to daily kitchen function up-to-date and accurate
  • Proficient in preparing all menu items and procedures according to TBS recipes & ingredients list
  • Proficient in TBS Allergy System and able to prepare substitutes for all meals according to daily allergy list and monthly ingredient list
  • Verify that food storage units all meet standard and are consistently well managed
  • Assist Head Chef in maintaining the TBS Kitchen budget including: update price list for ingredients, update quarterly budget, assist in food cost analysis for quarterly menus, etc.
  • Assist Head Chef with menu creation and ingredients lists
  • Assist with onboarding and training of new staff members
  • Valid Food Managers certification required
  • Ability to lift at least 25 lbs. and stand for extended periods of time
